Ginseng Recipes
Pumpkin Nut Muffins
1 cup flour
2/3 cup sugar
1 cup cooked pureed pumpkin
2 Tb yellow cornmeal
2 large eggs
1 tsp pure ginseng powder
1/3 cup pecans
2 tsp baking powder
1/3 cup raisins
1 tsp salt
2 Tb rum (optional)
1/2 tsp baking soda
2 tsp vanilla extract
1/2 tsp cinnamon
1/2 tsp nutmeg
1 stick butter, melted
Preheat oven to 375 degrees. Grease 10 muffin cups or use liners. Process
all ingredients for 3 seconds in work bowl of food processor using the
metal blade. Scrape down sides of workbowl and pulse 2 times. Divide
batter among prepared muffin tins and bake until toothpick inserted in
center comes out clean-about 25 minutes. Cool in pan for 8 minutes,
then turn onto wire rack.
